Tonight I made something that failed… Actually, I didn’t just make one thing that failed, I made three things that failed. Mozzarella meringue: didn’t taste like mozzarella. Tomato Espuma: Too loose, didn’t stand up (literally). Bone Marrow Ravioli: WAY too rich- even for me!


Thankfully I was my only audience for this particular failure night… There was one success: the meyer lemon pasta came out awesome. So why blog about this minor disaster? Continue reading

White Lasagna

This is the first in a 3 course dinner mega-chain post… The kitchen is like my sanctuary on days off… here’s what kind of trouble I can get into…



Lasagna filling

1 pound fresh spinach.

1 pound crimini mushrooms, sliced.

1 pound fresh mozzarella cheese, torn into small pieces.

1/2 cup ricotta cheese.

~10 fresh basil leaves.



3 cups semolina flour

2 whole eggs

2 egg yolks

1 heavy pinch salt

bench flour for rolling


White cheese sauce

2 tblspn butter

2 tblspn flour

1 cup heavy cream

1/4 tspn freshly grated nutmeg

4 tblspn ricotta cheese


I start by roasting some spinach and mushrooms. Just dump everything on a cookie sheet. Season with salt and pepper and toss in a little olive oil. Roast at 425F for about 25 minutes.

Late night Ravioli

Late night…

It’s a late night of drinking… who dosen’t like that? I had a great time at Red Bull Music Academy listening to Questlove of The Roots band (rumor has it Jimmy Fallon was also in the house) but he didn’t introduce himself… RUDE. Also, Houston’s own Bun B was present. Ain’t no party like a Red Bull Party:)

3) Started talking to a pretty girl…Gave her these:

Lady @ the flower store: Oh, WOW! Those are so pretty…

ME: Thanks.

Lady: You did a GREAT job picking out the colors…

ME: Thanks.

Lady: And the way she’s arranging them, it almost looks like a wedding bouquet…

ME: WHOA! Easy up there…


Then I cooked the pretty girl dinner…

Handmade Pasta, Spicy White Wine sauce, Shrimp, Parsley and Cherry Tomatos…


Then this happened…;)

Planned? No…but I like the way it worked out!
